Currency selection for individual documents / invoices instead of Global effect#4343

The current behaviour of switching currency affects every existing and new documents created.
This shouldn’t be the case as we have ad hoc invoices or quotations in foreign currency and want to mantain the original currency for existing documents. There should and must be currency selection available for individual documents at creation
